I’m currently galavanting around Las Vegas, but I wanted to pop in here to share the COOKIES that I made (and received) from the 2012 Great Food Blogger Cookie Swap! I participated last year and thought it was great, so when they emailed all of us saying there would be a charity aspect to this year’s swap, I definitely couldn’t pass it up.
I gave away one of the OXO Cookie Spatula’s that I received from OXO last week, but I wasn’t able to post the recipe I used until TODAY! Here we go:
Chocolate Chip Cookies with Salted Caramel
recipe slightly adapted from CulinaryChat.net
Ingredients:
- 2 cups all-purpose four
- 1/2 tsp. baking soda (NOT powder – I can’t tell you how many times I’ve mixed them up)
- 1 cup salted butter, slightly softened
- 3/4 cup brown sugar (I used light)
- 3/4 cup sugar
- 1 egg
- 1 egg yolk only
- 2 tsp. vanilla extract
- 1 cup chocolate chips (I used semi-sweet, but I imagine dark would be delish)
- 16 wrapped caramels, cut into very small pieces
- Sea salt
Instructions
- Preheat oven to 325 degrees
- In one bowl, mix flour and baking soda
- In a separate bowl, mix butter and sugars together
- Once creamed, add in the eggs and vanilla
- In batches, add flour to butter/sugar/egg/vanilla mixture until combined
- Add chocolate chips
- Chill dough for at least 30 minutes in fridge
- Once chilled, spoon dough onto non-stick pan
- Add caramel pieces and press them into the cookie
- Bake for 8 minutes, until lightly golden brown
- While still hot, sprinkle with sea salt
They. were. so. good.

Received these at 8:30 pm one night (who delivers the mail that late!?) and what a treat!! I love salted anything so these were perfect. Added bonus: by that time my kids were in bed so I had them all to myself! Thank you so much.
You are so sweet! (Your poor mailman! haha) I’m SO sorry for the terrible wrapping – as you can tell, life has been a little hectic and all of my cute Christmas paper and decor was packed. I was lucky I found a post-it note!!
