Fancy Tuesday

No, no, no – not FAT Tuesday (not yet, at least!) – fancy Tuesday! Somehow, dinner ended up being rather fancy tonight and it hardly took any effort!

I had some chicken, a lemon, wine (of course), butter and olive oil so I wondered what I could create with those ingredients. I remembered I had found a great Chicken Piccata recipe on Epicurious the other day and I couldn’t wait to try it!

Chicken Piccata is something that I love getting at restaurants and it’s always perfectly cooked and seasoned. I was a little worried it wouldn’t taste right, but it sure was delicious because I don’t think Kevin or I said a word during dinner.

I followed parts of this Epicurious recipe, but added my own twists.

  • 4 skinless boneless chicken breast, halved lengthwise
  • 2 tablespoons unsalted butter
  • 1 tablespoon vegetable oil
  • 2 tablespoons dry white wine
  • 1/2 lemon
  • Small handful of flour
  • S&P
  • 1 tablespoon drained bottled capers, chopped (normally, Chicken Piccata comes with capers, but neither Kevin or I like them. Nixed!)
  • 3 tablespoon minced fresh (dried because it’s cheaper) parsley leaves

Ingredients (wine not pictured...I was um....drinking it?)

Add 1 tsp. of butter and 1 tsp. of EVOO to a skillet and get it hot. While the pan is heating up, season the chicken breasts with salt and pepper and dredge in flour. Wipe off excess flour and cook in the skillet for 1-2 minutes on each side.

Take the chicken out of the skillet and set it aside.

Add 1 tsp. of butter, 1/2 a lemon and 2 tsp. of white wine to the same skillet. Scrape all the goodies (aka – crumbs) off the bottom of the pan and let it cook for a few minutes.

Meanwhile, prepare the delicious bread dip! Just like in a restaurant – EVOO, parmesan cheese and a tad bit of pepper. Put the bread in the oven at about 250 degrees for 5 minutes or so. I like my bread crunchy. Nommmm nommmm nommmmm.

I also prepared a quick salad while the chicken sauce was cooking. I used some bag lettuce ($.99 sale at Hy-Vee this weekend – what a steal!) and Pasta House dressing.

Now, Pasta House is a STL original (so good), but their dressing is simple. It’s olive oil, vinegar and parmesan cheese. Easy as pie!

Once the sauce is nearly thick, add the chicken back in to coat it and top with parsley. Voila!

Carrots and bread were the perfect sides.

This weekend was SO fun! My grandparents and aunt came to visit and we had a great time catching up and spending time together. I’m an awful blogger because I didn’t take a single picture all weekend, but it was kind of nice to be disconnected.

We ate, watched football, shopped, did a tour of Des Moines, ate some more, watched some more football and relaxed. It was perfect!

We also celebrated my birthday since it’s coming up this Sunday. We ate an amazing cheesecake for dessert and I got to open a couple presents. I got a beautiful quilt (pictures to come) and some cooking stuff from my grandma and a new jewelry box and some work-out clothes from my aunt!


I’m working on a pretty in-depth blog post on training puppies and I want to know what you guys want to learn about! Obviously, I’m not the dog whisperer, but I did a lot of research and reading on training dogs and I think we did a pretty good job with Grace so far, so let me know what topics you want to read about (potty training, teething, crating, etc.) *Note, we are in no way shape or form complete training her. She’s only 5 months old.*

And now I will leave you with this. We tortured her today and I think she hates us now.

Off to watch the Gossip Girl episode I missed last night! I hope Chuck survives – ah!
