Jack’s Mannequin

Ah – amazing! Last weekend, I went to Chicago to visit with some college friends and we went to the Jack’s Mannequin concert. AMAZING. For those of you who don’t know who he is, he’s used to be in the band Something Corporate, but worked on this solo album and ever since then, he’s been in the band Jack’s Mannequin. Right when he was finishing his first album, Everything in Transit, he was diagnosed with ALL (Acute Lymphoblastic Leukemia). He documented his whole journey with cancer and created a documentary titled, Dear Jack. Even if you don’t like this band or type of music, I highly suggest watching the documentary. It’s incredibly eye-opening and touching to watch someone’s experience with such an awful disease. (You’ll need tissues).

Last year, I went to the Something Corporate reunion tour concern (10 year reunion – made me feel so old) with my brother, Brendan and my cousin, Kelly.

At the Something Corporate reunion tour concert, he played Konstantine. Konstantine is a really long song, and it’s not on any of his albums. He hardly ever plays it, but he did at this concert and it was AMAZING! I took a quick 2 minute video of it and you can watch it on my Facebook page.

Alright enough about him. Kevin thinks his voice sounds scratchy and annoying, so we just don’t talk about that in our house because he’s my fav.

Anyways, everyone in Iowa is obsessed with college football (obsessed) so yesterday we had a tailgate in my office. It was fun! We all had to bring something, so I made St. Louis favorite, Gooey Butter Cake. Pretty sure a lot of people didn’t like it because it was hardly eaten. Oh well, more for me.

It’s really easy to make…just a few ingredients –

Mix 1 box of yellow cake with three eggs, 1 tsp of vanilla and 2 sticks of butter (melted). Oh, did I mention this is really healthy?

Pour it in a pan (this will be the ‘crust) –

Mix two eggs, 1 package of cream cheese (8 oz.), 2 eggs, 1 tsp of vanilla and 3 cups of powdered sugar –

Pour the “goo” right over the “crust” –

Bake for 45 minutes and top with a TON of powdered sugar. I didn’t take a picture of the “after” because my camera died and I cannot make it look as pretty as the stores do. Here’s what it’s supposed to look like, I suppose. Mine is always way messier –

Next weekend, we’re headed to Kansas City for the Women’s National Team soccer game match vs. Canada. Can’t wait!
