Last night, Kevin and I made the most delicious meal ever. It was seriously delish. Grilled teriyaki salmon over rice, grilled asparagus and a side salad. Sooooo good! This is how we made it:

Two big hunks of salmon. Half cup of teriyaki and a half cup of water.

 

 

 

 

 

 

 

 

Put the salmon in a bag and pour the teriyaki marinade in it. We let it sit in the fridge for about 20 minutes.

 

 

 

 

 

 

 

 

Then we got the asparagus ready. We put garlic powder, salt, pepper and olive oil over top. Wrapped it up in foil and put it on the grill. My mouth was watering at this point.

 

 

 

 

 

 

 

 

Then it was time to hit the grill! We can’t have charcoal grills at our complex, so we have an electric outdoors grill. We put it on medium heat, skin side down. The asparagus in the foil pack sat on the other side.

 

 

 

 

 

 

 

 

We had the heat low for awhile after getting some grill marks, so we left the salmon on the grill for about 10-15 minutes to cook all the way through. Then, we were ready to eat! Yum!

It was delicious!

I told you guys I would tell you the baked potato soup recipe, so here it goes:

Potatoes boiled, peeled and chunked
Cheddar Cheese
Milk
Flour
Butter
Bacon (crumbled)
Salt
Pepper

The real recipe called for onions and cucumber. I like neither of those items, so I opted to not include them.

I boiled, peeled and chunked the potatoes and cooked the bacon. Then, I melted 3 tablespoons of butter and stirred in 3 tablespoons of flour slowly. After that was combined and thickened, I whisked in 2 cups of milk. I turned the heat from medium to warm and stirred until the mixture was thick. Then, I added in 1/2 cup sharp cheddar cheese until it was melted. Then, I added 1/4 cup of milk, a spoonful of sour cream (just because I love sour cream), bacon, salt, pepper and a little bit of parsley. I stirred it until it was all combined, then I added the potatoes. Voila! It was DELISH.

Oh, and I took another intense work out class yesterday. Except, I was the youngest person in this class. I took a “step” class and man, it kicked my ass. I looked ridiculous because I am not coordinated so all those movements were not working out for me very well. Every single time I figured out the move, we’d move on to the next one! Argh! It was so frustrated! Nevertheless, I was sweated and I’m sore today…so I guess it worked. 🙂
