I have been M.I.A. this week! I haven’t blogged since Superbowl Sunday for goodness sake – that’s more than a week! Let’s get up to speed:
New Blog URL!!
Notice anything different when you clicked on my Facebook or Twitter link? Yep – I did it! Buying my own domain and self-hosting was one of my goals for 2012 and I FINALLY did it!
I had the hardest time picking out a domain name. Here was my thought process:
- gabbybladdick.com – boring and this blog isn’t a work portfolio
- andihavetolivewithaboy.com – longestURLever
- livewithaboy.com – doesn’t make sense
- lifewithaboy.com – taken
So that’s how I ended up with livingwithaboy.com. Hope you all like it! Just so you know, if you go to gabbybladdick.wordpress.com, you won’t find any new blogs, so come here from now on!
Don’t think for a second that I did all this on my own. No, no, no, not possible. I actually found Seth Lentz from some bloggers I read and he is AMAZING at helping bloggers switch from sites like WordPress to self-hosting sites. In the matter of a few weeks, he switched all my content over for only a really small fee (totally worth it!). He’s actually hosting a fundraiser right now so he can Summit for Someone. This July, he’s going to climb Mt. Rainier in support of Big City Mountaineers, a charity that helps teach at-risk youth valuable life skills. If you are friends with me on Facebook or follow me on Twitter, you know I recently accepted A NEW JOB! I’m thrilled about it and I’ve only been there since Feb. 1. I LOVE it already! Another reason why I haven’t blogged in awhile is because I have been working an event for work all weekend and it kept me pretty busy.
For those of you who don’t know, I’m now an Account Executive at a local PR agency. It’s a promotion from what I was doing at my old job and I’ll get to do a lot of great things for some really neat clients. I’m pumped!
To say tonight’s recipe was a winner is an understatement. How do Spicy Chicken Paninis sound? Real good, huh?
The ingredients I used:
- 2 chicken breasts
- 1/2 cup water
- 1/2 stick of butter
- 1/2 bottle hot sauce
- Lettuce of choice
- Bread of choice
I bought a mini french bread loaf from Hy-Vee and cut it in half.
I put the chicken, ranch, lettuce and a wee bit more hot sauce on the bun.
Grill baby grillllll
Talk about delicious.
I very rarely get compliments on dinner, not because Kevin doesn’t like what I make, but because he doesn’t really care what he eats. See, I LOVE food. I appreciate it and remember tastes, textures, smells and more. (And now I sound like a pig, but stay with me here!) Kevin, on the other hand, doesn’t get excited about food. He just eats because humans physically have to eat in order to live. So while he always enjoys the food I cook, he never gets too excited about them, whereas I am always mumbling between bites, “omg this is SO good.”
Tonight, however, was a totally different situation. We sat down at the kitchen table and Kevin took a bite. He said, “wow, this is really good.” Then, he got up to get napkins and I heard him mumble, “mmmmmhmmmmm!!” as he was chewing his second bite. This continued until he said, “this might be my favorite meal ever” (talk about a compliment!).
No, tonight’s dinner wasn’t my favorite meal ever, but I did take some time to think about the BEST thing I ever ate. I think I narrowed it down to two meals.
- “Seafood alla Vodka” at Pesto’s in Valparaiso, IN – we went there for both mine and Kevin’s graduation and I ordered it both times. To. Die. For.
- “Tenderloin Mudega” at LoRusso’s in St. Louis, MO – we went there three or four years ago for my grandparent’s 50th wedding anniversary. It was DELICIOUS! I apologize for not having any pictures – next time. 🙂
I know this post is already obnoxiously long, but I wanted to give a quick update on Miss Grace. Last Saturday, we noticed she has this big swollen mark in her eye. We called the vet right away and made an appointment to bring her in. The vet said she either has a really bad eye infection or a cherry eye. She gave us eye drops to use this week in hopes that it’s just an eye infection, but it is most likely a cherry eye. So far, the eye drops aren’t making it any better, so she’ll most likely need surgery to fix the problem. Even with surgery, there’s a good chance it can reoccur. 🙁 🙁 🙁 Poor Grace! Keep her (and my bank account) in your thoughts and prayers this week. I’ll post another update as soon as we know what’s going on!
