Noodles & Company Recipe

Happy Wednesday! Over the hump and one day closer to the weekend. I’ll take that!

Tonight, I made a delicious dish of Noodles & Company’s Whole Grain Tuscan Linguine! I absolutely loooove Noodles & Co and could probably eat it every night if I could. Unfortunately, I’m not made of money and dining with them adds up after awhile, so I decided to create my own version. I followed this recipe and it turned out great! Of course, it doesn’t taste “exactly” the same, but it’ll do. 🙂

Ingredients I used:

  • Linguine (I used whole grain)
  • Broccoli
  • Red Pepper
  • Mushrooms
  • Red Onion
  • Olive Oil
  • White Wine
  • Chicken Broth
  • Half & Half
  • Parmesan Cheese
  • S&P
I washed and cut up all my veggies before putting them in a pan with a little bit of olive oil.

Meanwhile, I boiled some whole grain linguine (my favorite noodle!).

When the veggies had a nice crispness to them, I added some white wine, a dash of half & half and a small handful of parmesan cheese. When that turned into a nice little sauce, I added my noodles and it was done! Simple as that.

Really easy and delicious!

What I Want Wednesday

I’m sad to report I have yet to purchase those tennis shoes from last week’s WIWW. I think I did decide I definitely want to purchase those, but I’m going to hold out until April I think.

Part of the reason why I’m waiting on that, is because Kevin and I are going to Chicago for St. Patrick’s Day and we’re meeting my family there! It’s going to be SUCH a fun weekend and we have plans to stop by the wonderful IKEA on the way back to Des Moines. I could go nuts in Ikea stores and I am on a mission for ONE thing this trip: curtains.

We’ve lived in our apartment for 8 months and we don’t have curtains. That makes me sad because our walls are so white and bare. I just want some dang curtains! They are expensive though so we’re hoping to find some good deals at Ikea. Wish us luck!
