Wowowow where did this week go?! Holy cow, no blogging all week? That is madness I tell you!
Let’s catch up.
Well, about three hours ago I found out that I won a free suit/tux rental thanks to Men’s Wearhouse!! A simple RT in their Friday contest and we have ourselves a free rental. How awesome is that!? And Kevin thinks Twitter is stupid…hah! Thanks, Men’s Wearhouse! What an awesome contest giveaway!
I made some awesome ballpark “game-day” nachos last week but the Cardinals lost and I don’t want to talk about it so I’m not posting that recipe.
I went to Miyabi 9 again (checking things off the list left and right!) with my two good friends, Ashley and Gretchen to catch up before we leave. It was SO fun, we had so many good conversations and I absolutely loved spending time with them. I’m going to miss them both so much, but thankfully I didn’t have to say goodbye yet because we’re getting drinks Tuesday night!
We split a few different rolls, but I forget which ones we got because we had too much fun chatting. 🙂

Last night Gracie had her last vet appointment with our vet here. She had to get caught up on all of her shots since we’ve now had her for about a year! I can’t believe it’s been that long. I was so excited to go pick her up and now I cannot imagine our life without her.
I vividly remember our first picture of Gracie when we were picking her up from The Animal Rescue of Carroll.
Now she’s so big!
If you live in Des Moines and you’re looking for a vet, we highly, HIGHLY, recommend Sullivan Family Pet Hospital in Johnston. Dr. Sands and Dr. Sullivan are seriously two of the nicest people ever (they hugged me goodbye when I told them we were moving) and Dr. Sands worked wonders on Gracie’s eye. They’re so great!
After Gracie’s vet appointment, I headed to a baby shower! Kevin’s coworker and his wife are due in January (best birthday month ever) with a baby boy and we couldn’t be more excited for them!
Holy goodness it was delish!
I began by setting out all of my ingredients. I used three Granny Smith apples, caramel (these caramel bits are amazing – could not stop poppin’ em!), chocolate morsels, frozen Snicker bars and some mini Reeses (not pictured).
I cut up my Snickers and Reeses into small pieces.
Then I cut up the apples into thin slices and melted the chocolate and caramel. I also squirted a bit of lemon over the apples because I noticed they were browning rather fast.
The rest is pretty self explanatory. Just assemble everything together!
To give you an idea on how many people this feeds…we had five girls at the baby shower and we had a little bit leftover. I originally thought we’d need one apple per person, but I think three apples for the five of us was perfect.
Caramel Apple Nachos
Recipe adapted from a gathering of Pinterest recipes
- Three Granny Smith apples
- Frozen Snickers (frozen makes it easier to cut)
- Reeses peanut butter cups
- Caramel for melting
- Chocolate morsels for melting
- Melt caramels per package’s instructions (my package said mix caramel with 2 tbsp. of water over low heat while stirring constantly)
- Melt chocolate in a double boiler
- Slice apples thin
- Spread caramel and chocolate over the apples
- Sprinkle with Snickers and Reeses

After the race, we’ll probably come back and take a nap before getting stuff done around the apartment. While we don’t have to pack ourselves (we have movers that come with the job relocation), I’m going to try my best to organize and make sure everything is organized and in its right place so things get boxed together. You know me – organization is the best. 🙂
I was supposed to leave for Richmond, VA on Sunday for work, but tonight I talked to my boss and we decided to change my trip and flight to November thanks to Hurricane Sandy. Apparently Virginia is in a State of Emergency and I had no idea if my flight would be canceled. Could you imagine me getting stuck in Virginia next week, days before we’re scheduled to move? Hello anxiety attack waiting to happen!
