Taco Pizza and Chocolate Chip Pancakes

Soooooo last night was my first experience with taco pizza and it’s my new favorite thing. It’s everything I love about tacos put on top of everything I love about pizza. YUM!

We went out with our friends Jess and Chris last night for some pizza at a place called Papa’s Pizzeria in Polk City. I can’t believe I didn’t take a single picture, but I’m sure you can imagine what taco pizza looks like. We shared one taco pizza, one meaty pizza and a couple pitchers of beer. Then, we went back to their place to watch Couples Retreat (funniest movie ever!) on their big projector screen. It’s so cool! (Also should have taken a picture.)

Early this morning, Kev had to go into work for a couple of hours so I decided to make his favorite breakfast before he got home – Chocolate Chip Pancakes! There’s nothing tricky or complicated about making chocolate chip pancakes, but I think the trick is buying (or making) a buttermilk mixture. It makes it so thick and fluffy!

Mix everything together according to package directions and dump some chocolate chips in. I use 1/3 of a cup of chocolate chips for 10 pancakes.

I use an ice cream scoop because it’s the perfect size and the mixture is thick enough to not run off the scoop.

You know it’s time to flip the pancakes when it starts to bubble at the top.

Butterrrrrrr. (Speaking of butter, this morning I was watching Paula Deen, whom I’m not a huge fan of, and I decided one could get drunk by 10 a.m. if they played the drinking game “take a shot every time Paula says ‘butter.'” You should try that next Saturday!)

They were SO good and now that I’m seven pancakes in, I’m ready for a nap. 😉

Chocolate Chip Buttermilk Pancakes

Ingredients
-Buttermilk pancake box mix (or follow this homemade recipe)
-1/3 cup semi-sweet chocolate chips

Instructions
-Turn griddle to 300°F
-Oil griddle with Pam (or other cooking spray)
-Mix batter to package directions
-Add chocolate chips
-Using ice cream scooper, form pancakes on griddle
-When bubbling, flip pancakes
-Top with thin slices of butter immediately after removing from griddle

While I was cooking, I noticed an old picture of my dad, mom and I that I have hanging up on a cork board picture frame in the kitchen. Can we take a sec and look at my dad’s shorts (go Blues!) and the bandana around his neck? Not to mention the Disney World button on his shorts? Bah. I’m sure we did not win the 1993 Disney World Most Fashionable Award.

I just LOVE looking through old pictures. When I graduated high school, my mom put together the most thorough scrapbook of my entire life and it definitely includes some hilarious photos. I look through it all the time – such a good present!

I’m off to relax (possibly nap), clean house and get ready for a sushi party we’re going to this afternoon! Kevin’s co-worker’s wife is from Bangkok and she is an AWESOME cook. She is having a sushi/Thai food get together at their house tonight and I’m drooling already thinking about it! Then, we plan to watch the BLUES game!
