I don’t know if I’d necessarily consider myself a food blogger. I actually don’t consider myself a real “blogger,” but whatever. I love food. I love to write/blog. Therefore, am I a food blogger? Even if I’m not your traditional food blogger, I participated in The Great Food Blogger Cookie Swap.
Basically, TGFBCS was started by Lindsay at Love and Olive Oil and Julie at The Little Kitchen. They wanted a way to share cookie recipes and the swap was born! Each blogger received three matches via email. We had to make 12 dozen cookies for each blogger, but use the same recipe.
I decided to make a version of my oatmeal cookies!
My recipe (adapted from Better Homes and Gardens 15th edition cookbook):
- 1 cup butter
- 1/2 cup brown sugar
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon (plus a little extra pinch) ground cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- 2 eggs
- 1 1/2 cup all-purpose flower
- 1 cup pomegranate craisins (plus a little more)
- 3 cups oatmeal (it looks like a lot, but I promise, you’ll want to add all 3 cups)
Preheat the oven to 350 and beat butter, sugars, baking soda, cinnamon, nutmeg and salt.
Beat eggs and vanilla. Then, add the flour (add a little at a time). Then, add the craisins and oats. Then, lick your spoon.
Scoop dough onto pan and put in the oven for 9 minutes. Then, lick the bowl (as always).
There isn’t a big difference between these and the ones I made previously, but the addition of the pomegranate craisins seriously made them taste so much better. The pomegranate tartness mixed with the rich flavors of cinnamon and nutmeg made it the perfect treat. I made four dozen cookies and the ones I kept at home were gone in two days. Oops!
