Thirty Days of Thanks

Thirty Days of Thanks

Pinterest is my latest obsession and I don’t think it is an obsession that is going to go away anytime soon. I have “boards” for a bajillion different things: food, ideas for my future home, ideas for a future wedding, pictures dedicated to all things navy, my lack of a wardrobe and the list goes on. This morning, I stumbled across this pin

What a great idea! I mean, having the name Gabby is no hard feat – I rarely have trouble coming up with things to talk about, but I thought this project would be so fun because it would challenge me to come up with a variety of things to talk about! November is the perfect month to start this challenge as I capture some of my favorite things that I am most thankful for. (Thanks for the great idea, Dani!)

Documenting my favorite food is very hard. I. love. food. I mean, I love it a lot. Kevin and I always have an argument about food because he eats to eat. I eat because I love food! I love starting with ingredients and creating them into something wonderful and delicious. I love, more than most things, going out to a restaurant and having the hardest time deciding on what to order because everything sounds so mouth watering. Kevin, however, would eat whatever is in front of him. (Shame on him!) So to ask me what food I’m most thankful for is hard, but I think it all comes down to this one –

NACHOS. I. love. nachos. Can’t get enough of ’em. I narrowed down the decision by thinking about what food I could eat for the rest of my life and not get sick of it. I picked nachos because you can create such different combinations, flavors, textures, ingredients and toppings!

I’ve had some pretty darn good nachos in my day, but since I started blogging, I have captured two glorious nacho moments (noted here and here).

The first picture of nacho amazingness is from the Iowa State Fair. They were pretty traditional nachos with ground beef and your usual toppings (lettuce, cheese, tomato, etc.) Nevertheless, they were drool-worthy –

My second “favorite-food-to-be-thankful-for” picture is from a bar in Kansas City. These were very unique and had extremely fresh ingredients. Loved ’em –

I think my ode to nachos has been extensive enough.

Dinner

Tonight Kevin and I celebrated the life of his dad with some deep dish pizza (yum!) and college basketball (go Valpo!).

Gracie

Hey, did you know puppies sleep all the time? Welp, they do!

Gracie has grown so much in one week! She weighs 10.7 lbs and barely fits on my lap anymore. This makes for one sad puppy-momma. We knew she was going to be a big dog, but I love that she’s a little puppy!

Blogging

Friends and readers – I’m working on re-doing my ‘about me’ page, adding some FAQs and information on ‘who is who.’ If you have questions or ideas on what to include, let me know! 🙂

    • We remember him every year! Usually, we go out to eat to celebrate but we’re on a budget so we decided to get frozen deep dish pizza (fancy!) and celebrate at home instead. 🙂 We can’t wait to see you either!

  1. Don’t worry about Gracie getting to big to sit in your lap. My dog weighs 80 pounds and still thinks its ok to sit in our laps!
